Chocolate Stout Cupcakes with Peanut Butter Frosting

A rich, dark & intensely chocolaty stout-laced cupcake with a certain 'je ne sais quoi'. All topped with a decadent peanut butter frosting. Sounds very naughty, but actually these cakes are sweetened with honey.
Ingredients

for the cupcakes

  • 120 grams/1 cup plain flour
  • 1½ teaspoons baking soda
  • 70 grams/5 tablespoons butter
  • 225 grams/2/3 cup honey
  • 125 ml/½ cup stout beer e.g. Guinness
  • 40 grams/⅓ cup unsweetened cocoa powder, sifted
  • 60 grams/¼ cup plain yoghurt (I used Greek)
  • 1 egg

for the frosting

  • 113 grams/½ cup butter, softened
  • 250 grams/1 cup peanut butter
  • 250 grams/2 cups confectioner’s/icing sugar
  • about 3 tablespoons milk
  • chocolate buttons for decoration (optional)

Cupcakes

  1. Preheat the oven to 190C/375F. Line a cupcake tin with cupcake liners.
