Chocolate Stout Cupcakes with Peanut Butter Frosting

A rich, dark & intensely chocolaty stout-laced cupcake with a certain 'je ne sais quoi'. All topped with a decadent peanut butter frosting. Sounds very naughty, but actually these cakes are sweetened with honey.
for the cupcakes
- 120 grams/1 cup plain flour
- 1½ teaspoons baking soda
- 70 grams/5 tablespoons butter
- 225 grams/2/3 cup honey
- 125 ml/½ cup stout beer e.g. Guinness
- 40 grams/⅓ cup unsweetened cocoa powder, sifted
- 60 grams/¼ cup plain yoghurt (I used Greek)
- 1 egg
for the frosting
- 113 grams/½ cup butter, softened
- 250 grams/1 cup peanut butter
- 250 grams/2 cups confectioner’s/icing sugar
- about 3 tablespoons milk
- chocolate buttons for decoration (optional)
Instructions
Cupcakes
- Preheat the oven to 190C/375F. Line a cupcake tin with cupcake liners.
