Sweet Potato Cupcakes

Did you think sweet potatoes and baking don’t work together? Think again! They are delicious and go perfectly with the spices generally associated with fall baking.
Ingredients
Cupcake:
- 1 cup oil
- 1 cup sugar
- 3 eggs
- 1 cup brown sugar
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- ¼ teaspoon nutmeg
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 cup sweet potato puree (from about 2 medium sweet potatoes)*
- 2 cups flour
- 2 sticks (1 cup) margarine
- 2 cups marshmallow fluff
- 2 ½ cups confectioner’s sugar
- 1 ½ teaspoons vanilla extract or vanilla bean paste
- 2 Tablespoons maple syrup
- 1 teaspoon cinnamon
Instructions
- Preheat oven to 350. Line a cupcake pan with paper liners.
- In the bowl of an electric mixer, on medium speed, beat together the oil and egg for a couple of minutes until combined and slightly thickened.
