Ingredients

  • 2 tablespoons vegetable oil
  • 6 tablespoons unsalted butter, softened
  • 1/2 cup sugar
  • 1/2 cup packed light brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 6 tablespoons unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup milk

For the frosting:

  • 1 cup unsalted butter, soft
  • 3 cups powdered sugar
  • 2 tablespoons heavy cream
  • 1/2 teaspoon peppermint extract
  • 3-4 drops of green food coloring
  • chocolate mint candies, optional


Instructions
  1. Preheat the oven to 350F degrees. Line 20 muffin cups with paper liners. Set aside.
