Coconut Cupcakes {Bird Nest Cupcakes}

These coconut cupcakes were very moist, fluffy and delicious and the frosting is sweet too. You will love the flavor combination!
Coconut Cake:
- 1 ½ sticks unsalted butter, room temperature, plus more for pan
- 1 ½ cups unbleached all-purpose flour
- ½ teaspoon baking powder, preferably aluminum free
- ¼ teaspoon baking soda
- ¼ teaspoon fine sea salt
- ⅛ teaspoon ground cardamom
- ½ cup cream of coconut, such as Coco Lopez
- 1 teaspoons pure vanilla extract
- 1 teaspoons pure almond extract
- 1 cups sugar
- 3 large eggs, room temperature
Coconut Meringue Buttercream:
- 6 large egg whites
- 1 ¼ cups sugar
- 2 cups (4 sticks) unsalted butter, room temperature, cut into tablespoons
- ¼ cup cream of coconut
