Coconut Cupcakes {Bird Nest Cupcakes}

These coconut cupcakes were very moist, fluffy and delicious and the frosting is sweet too. You will love the flavor combination!
Ingredients
Coconut Cake:
  • 1 ½ sticks unsalted butter, room temperature, plus more for pan
  • 1 ½ cups unbleached all-purpose flour
  • ½ teaspoon baking powder, preferably aluminum free
  • ¼ teaspoon baking soda
  • ¼ teaspoon fine sea salt
  • ⅛ teaspoon ground cardamom
  • ½ cup cream of coconut, such as Coco Lopez
  • 1 teaspoons pure vanilla extract
  • 1 teaspoons pure almond extract
  • 1 cups sugar
  • 3 large eggs, room temperature
Coconut Meringue Buttercream:
  • 6 large egg whites
  • 1 ¼ cups sugar
  • 2 cups (4 sticks) unsalted butter, room temperature, cut into tablespoons
  • ¼ cup cream of coconut

  1. Preheat oven with a rack set in the lower third. Line two muffin tins with cupcake wrappers
