Crazy-Gorgeous Pumpkin Spice Cupcakes

These are truly the BEST pumpkin spice cupcakes. Don’t believe me? It had a definite pumpkin flavor, and of course, top it off with a lovely swirl of cream cheese frosting and a little sprinkling of chopped walnuts and you’re pretty much in pumpkin heaven.
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1/8 teaspoon nutmeg
- 2 1/2 teaspoons pumpkin pie spice
- 1 cup packed light-brown sugar
- 1 cup granulated sugar
- 1 cup unsalted butter (2 sticks)
- 4 large eggs, lightly beaten
- 1 15 oz. can pumpkin (not pumpkin pie filling)
Cream cheese frosting:
- 8 oz. package cream cheese, softened
- 1 stick of butter(1/2 cup), softened
- 1 teaspoon vanilla
- 2-3 cups powdered sugar
- Chopped walnuts for garnish optional
- Preheat oven to 350 degrees. Line cupcake pans with liners: set aside.
- In a medium bowl, mix together flour, baking soda, baking powder, salt, cinnamon ginger, nutmeg, and pumpkin pie spice; set aside.
