Crazy-Gorgeous Pumpkin Spice Cupcakes

These are truly the BEST pumpkin spice cupcakes. Don’t believe me? It had a definite pumpkin flavor, and of course, top it off with a lovely swirl of cream cheese frosting and a little sprinkling of chopped walnuts and you’re pretty much in pumpkin heaven.
Ingredients


  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/8 teaspoon nutmeg
  • 2 1/2 teaspoons pumpkin pie spice
  • 1 cup packed light-brown sugar
  • 1 cup granulated sugar
  • 1 cup unsalted butter (2 sticks)
  • 4 large eggs, lightly beaten
  • 1 15 oz. can pumpkin (not pumpkin pie filling)
Cream cheese frosting:
  • 8 oz. package cream cheese, softened
  • 1 stick of butter(1/2 cup), softened
  • 1 teaspoon vanilla
  • 2-3 cups powdered sugar
  • Chopped walnuts for garnish optional



Instructions

  1. Preheat oven to 350 degrees. Line cupcake pans with liners: set aside.
  2. In a medium bowl, mix together flour, baking soda, baking powder, salt, cinnamon ginger, nutmeg, and pumpkin pie spice; set aside.
