Don’t just drink your pina colada! Enjoy it in the form of a cupcake. These moist pineapple cupcakes with coconut frosting will make you feel like you are on a tropical island. Ingredients
  • 1-2/3 cups all- purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, room temperature
  • 1/4 cup packed light brown sugar
  • 1/2 cup white sugar
  • 1 teaspoon vanilla extract
  • 1-1/2 teaspoon rum extract
  • 2 large eggs, room temperature
  • 1 (8-ounce) can crushed pineapple, undrained
For the frosting:
  • 1-1/4 cups unsalted butter, room temperature
  • 2-1/2 cups powdered sugar
  • 4 tablespoons canned coconut milk
  • 1/2 teaspoon coconut extract
  • 1/2 cup sweetened shredded coconut, toasted
  • pineapple slices for garnish, optional
  • maraschino cherries for garnish, optional


Instructions
  1. Preheat the oven to 350F degrees. Line a 12 cup muffin pan with paper liners.
  2. In a medium mixing bowl, combine the flour, baking powder, and salt. Stir with a whisk to combine. Set aside.
