Pistachio Hot Fudge Cupcakes
-Recipe-
 These Pistachio Hot Fudge Cupcakes with Fudgy brownie bottoms, pistachio gelato on top, cream cheese frosting (!!!), topped with gooey chocolate, crushed pistachios, sprinkles...Just try it and tell me!!
Ingredients

  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 1/2 tablespoons vegetable oil
  • 2 teaspoons vanilla extract
  • 2 ounces high-quality milk chocolate, melted
  • 1/2 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 2/3 cup chocolate chips/chunks
  • 2 pints pistachio gelato/ice cream (you probably won't need ALL of this... but have some extra)
Frosting:
  • 1/2 cup unsalted butter, softened
  • 8 ounces cream cheese, softened
  • 2 1/2 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 1 to 2 tablespoons milk, if needed
For Topping:
  • hot fudge
  • crushed pistachios (roasted/salted is fine - your preference)
  • sprinkles
  • cherries
